Friday Foodspiration: Almond Butter Cookies with Chocolate Hearts

Sweet and treats are absolutely necessary for Valentines Day . . . but do we have to sacrifice the healthy habits we have worked the past 6 weeks of his new year to establish?

Absolutely not!

These almond butter cookies are great on their own or with the homemade chocolate heart in the middle. If you don’t want to take the time (or don’t have the ingredients) to make your own chocolate, add your favorite dark (>80%) chocolate in the center.

Ingredients:

Chocolate Hearts

  • 1/2 cup Cacao Butter
  • 1/2 cup Coconut Oil
  • 1/2 cup Cacao Powder
  • 1/4 cup Swerve Sweetener

Cookies

  • 1/4 cup Almond Butter
  • 1/4 cup Coconut Oil, softened
  • 1/3 cup Swerve Sweetener
  • 1 tsp Vanilla Extract
  • 1 cup Almond Flour
  • 1/4 cup Coconut Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Sea Salt

Instructions:

  1. Add ingredients for the chocolate in a small saucepan over low-medium heat. Stir until melted and well combined. Pour into heart (or other shapes) silicone mold. Refrigerate until set.
  2. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  3. In a medium bowl, combine the flours, baking soda, and salt. Whisk to break up chunks in the almond flour. Set aside.
  4. In a large bowl, cream together the almond butter, coconut oil, sweetener, and vanilla with an electric mixer. Then add in dry ingredients until a sticky dough forms. Refrigerate for 30 minutes.
  5. Form cookie dough into balls and place on cookie sheet. Press them in the center to make a small indentation. Bake for 12-15 minutes until just set.
  6. Remove cookies from oven and allow them to cool for a few minutes. Press a piece of chocolate into the center of each cookie.
