Friday Foodspiration: Butternutty Bread

A little bit sweet and a whole lot healthy!

When working with health coaching clients, most often I find they are not eating enough protein consistently throughout the day. This limits their ability to make progress with workouts, maintain hormone balance, and burn body fat. Protein isn’t just for body builders!

This quick bread is loaded with protein, omega 3 healthy fats, and even a vegetable. It will help repair muscle, build stronger bones, boost the immune system, and balance blood sugar. What more could you want from a snack?

What it doesn’t have . . . gluten, grains, dairy, or oils. This is a great post workout refuel or even afterschool snack for the kids.

Ingredients:

  • 1/2 cup Coconut Flour
  • 1/2 cup Golden Monk fruit Sweetener
  • 1/2 cup Collagen Peptides
  • 2 tbs Cinnamon
  • 1 tbs Baking Powder
  • 1 1/4 cup Liquid Egg Whites
  • 1 cup Butternut Squash Puree (or 8 oz baby food)
  • 1 tbs Vanilla Extract
  • 1/2 cup Chopped Walnuts or Pecans

Instructions:

  1. Preheat oven to 350 degrees and line a loaf pan with parchment paper.
  2. Mix together all of the dry ingredients except the nuts in a medium size bowl.
  3. In a separate bowl, whisk, together the egg whites, squash, and vanilla. Add this to the dry ingredients.
  4. Fold in nuts and let batter sit for 5 minutes to thicken.
  5. Pour batter into the prepared pan and back for 40-45 minutes or until a toothpick comes out clean. You may need to cover the top with parchment or foil if it is browning too quickly.
  6. Remove from the oven and allow to cool of r at least 1 hour before slicing.
