These Cauliflower Dippers with marinara dipping sauce were an absolute hit at our Super Bowl Party, so I thought I would share them with you too. Perhaps you don’t think of anything fried as being “healthy”, but I promise you this was a better option than just about any of the chips or dips being eaten on Super Bowl Sunday.
This recipe does contain dairy (Parmesan cheese), because I primarily made this for my husband who can and does like all the cheese he can get. I have successfully substituted nutritional yeast for Parmesan in many recipes, but I haven’t tried with this recipe yet.
One more note before we begin . . . I chose to use Grapeseed Oil because of it’s high smoke point. It’s a great option for shallow pan frying and is also high in vitamin E and antioxidants. Just be sure to buy a high quality, non GMO brand to reap the benefits.
Ingredients:
- 1 head of Cauliflower, cut into bite size florets
- 1/2 tsp Sea salt
- 1/2 cup Almond Flour
- 2 eggs
- 3/4 cup Grated Parmesan Cheese
- 1/4 cup Ground Flax Seed
- 1/8 tsp Garlic Salt
- 1/4 tsp Paprika
- 1/8 tsp Ground Black Pepper
- Grapeseed Oil for frying
- Ranch or Marinara dipping sauce
Instructions:
- Bring a pot of well salted water to a boil. Add cauliflower and blanch for 1 minute. Drain and shock in ice water until cool. Drain again and dry on paper towels.
- Add flour and salt to a medium size dish. In a second dish beat the eggs. In a third dish combine the cheese, ground flax seed, garlic salt, paprika and black pepper.
- Bread the cauliflower by tossing to coat in flour, coating with egg, and then adding to Parmesan mixture. Gently coat each piece well and gently shake to remove excess.
- In a shallow frying pan, heat oil over medium-high heat. Add the cauliflower in small batches and cook 5-8 minutes, turning frequently, until crispy and golden brown.
- Remove from pan and drain on paper towels. Serve with ranch or marinara dipping sauce.
