Oatmeal Raisin Cookies are a favorite at my house. The sweetness of the raisins in this energy bite, make it feel just like the sweet treat we love.
The energy boost in this recipe comes from the protein, healthy fats, and slow burning carbohydrates. Great for after a workout as flax seed fights inflammation and sunflower seed butter has antioxidants for muscle repair.
Ingredients:
- 1/2 cup Sunflower Seed Butter
- 1/2 tsp Vanilla
- 1/8 tsp Salt
- 2 tbsp Coconut Sugar
- 2 tbsp Maple Syrup
- 2 tbs Flax Seed
- 1/2 tsp Cinnamon
- 1/2 cup Oat Flour
- 1/2 cup Rolled Oats
- 1/4 cup Raisins
Instructions:
1. Combine Sunflower seed butter, vanilla,
salt, sugar, maple syrup, flax seed, and
cinnamon until smooth and creamy.
2. Add oat flour and rolled oats until well
combined, then stir in raisins.
3. Form into 1-2 inch balls and place on
cookie sheet.
4. Refrigerate until firm before serving.
