Friday Foodspiration: Healthier Sloppier Joes


Do you have fond memories of sloppy joes from your childhood?

It is the ultimate quick, tasty, family friendly weeknight meal.  Unfortunately, that canned sauce is full of preservatives, sugar, and sodium. Let’s add some extra fresh veggies to a homemade sauce and make this a much healthier version for our family.

It might take a little extra time for preparation but it is great for leftovers and can even be frozen for another busy night.

We serve this in lettuce wraps with some sweet potato chips or fries on the side to scoop up all the meat that inevitably falls out.

Ingredients:

  • 1 lb Lean ground beef or turkey

  • 1/2 cup Bone Broth (or stock)

  • 1 clove Garlic, crushed

  • 1 medium Onion, minced

  • 1 Carrot, minced

  • 1 Red Bell Pepper, minced

  • 4 oz Mushroom, minced

  • 1 tbsp Apple Cider Vinegar

  • 1/4 cup Tomato Paste

  • 1 tsp Salt

  • 1/2 tsp Pepper

  • 1 tsp Paprika

  • 1 tsp Cumin

  • 1 tsp Dry Mustard

Instructions:

  1. Brown meat over medium-high heat in a large skillet.

  2. Add vegetables and broth, cooking on medium heat until vegetables soften.

  3. Add tomato paste, vinegar, and spices. Stir together well.

  4. Cover mixture and simmer for 20 minutes. Serve warm.

*You can also serve this over rice, on rolls, or stuffed inside a baked potato.
