Friday Foodspiration: BBQ Chicken “Pasta”

When a recipe for Cheesy, BBQ, Bacon Pasta I knew this would be a yummy comfort food for this fall. I also knew it was going to need quite a few modifications to make it gluten free, grain free, dairy free, and low carb. It actually turned out to have none of the same ingredients other than the diced tomatoes, salt, and pepper.

If you have never tried miracle noodles, they are an awesome substitute for pasta. There is a very particular way they need to be prepared for them to taste their best though. There are instructions at the end of the recipe.

Ingredients:

  • 2 packs of Miracle Noodle Fettuccine*

  • 2 tbs Avocado Oil

  • 2 boneless skinless Chicken Breasts, cubed

  • 2 cloves Garlic, minced

  • 2 Green Onions, sliced

  • 1/2 cup Chicken Bone Broth

  • 1/2 cup canned Coconut Milk

  • 2 tbs Nutritional Yeast

  • 1 can (14.5 oz) Diced Tomatoes, drained

  • 1/4 tsp Black Pepper

  • 1/2 tsp Sea Salt

  • 1/4 cup No Sugar Added Barbecue Sauce

  • Optional – 1/4 cup cheese or So Delicious Dairy Free Alternative

Instructions:

  1. Prepare Miracle Noodles** or zoodles and set aside.

  2. Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden on the outside (no pink visible but may not yet be cooked all the way through.

  3. Add garlic and onion, cooking 2-3 minutes or until translucent.

  4. Stir in chicken broth, coconut milk, nutritional yeast, canned tomatoes, salt, and pepper. Bring to a boil, reduce heat, simmer for 5 minutes.

  5. Stir in barbecue sauce and noodles. Cook an additional 1-2 minutes or until heated through. Optional to top each serving with cheese or dairy free alternative before serving.

*Miracle noodles are a low calorie, low carb alternative to regular pasta. You can substitute spiralized vegetables if you prefer. In to above picture I actually used both because I only had one pack of miracle noodles at home and my kids will eat this up quick!
