Friday Foodspiration: Asian Meatloaf

Asian American Fusion at it’s finest!

It’s the comfort food you love with the fun Asian flavors that you crave. I used similar ingredients that I would when making meat for a lettuce wrap but instead of standing of the hot stove to brown the meat and sauté all the ingredients they all just got mixed in a bowl and put into my meatloaf pan.

This gluten, grain, dairy, and soy free dinner is great leftover for lunch or double to recipe to freeze one for later. Serve with rice, noodles, or stir fry veggies and dinner is ready!

Ingredients:

  • 2 lb Ground Beef

  • 2 cloves Garlic, minced

  • 2 Green Onions, chopped

  • 2 Eggs

  • 1 tbs Tomato Paste

  • 1/4 tsp Black Pepper, ground

  • 1/4 tsp Sea Salt

  • 1/4 cup Coconut Aminos

  • Glaze

    • 1 tbs Tomato Paste

    • 1 tbs Monk fruit Sweetener

    • 1 tbs Coconut Aminos

  • 1 Green Onion tops, chopped

Instructions:

  1. Preheat oven to 350 degrees and spray a 9×5 loaf pan with non stick cooking spray.

  2. Combine all ingredients up to the glaze in a large bowl and mix well.

  3. Transfer the meat mixture to the loaf pan and bake for 45 minutes.

  4. Meanwhile, combine the glaze ingredients in a small bowl.

  5. Once meatloaf is done, pour glaze over the top and cook for an additional 10 minutes.

  6. Remove from oven when cooked through, sprinkle with chopped green onions and let cool for 10 minutes before slicing to serve.
