Friday Foodspiration: BBQ Pulled Chicken

Bottled sauces can sneak in loads of sugar, sodium, and artificial colors and flavors. Check the labels in your pantry . . . the ingredients might surprise you.

There are some brands doing a great job, but you will definitely pay for the higher quality ingredients.

I found myself having an even more difficult time when I found ingredients like garlic and onion caused me tummy trouble and all the “sensitive tummy” recipes were loaded with sugar to make up for those flavors.

Can’t I have the best of both worlds? I needed no sugar, no artificial ingredients, no inflammatory oils, and no garlic or onion to upset my digestive system. So I made a recipe that should meet everyone’s needs . . . and still taste great – kid tested and approved!

Gluten free. Grain free. Dairy free. Paleo. Keto. Low FODMAP.

Ingredients:

  • Gut Friendly BBQ Sauce

    • 1 can Tomato Puree

    • 2 tbs Tomato Paste

    • 1/2 cup Pureed Carrots (or 4 oz carrot baby food)

    • 1 tb Coconut Aminos

    • 1 tsp Paprika

    • 1 tsp Cumin

    • 1 tsp Chives, fresh or freeze dried

    • 1 tbs Monk fruit Sweetener

    • 1 tsp Sea Salt

  • 4 Chicken Breasts, boneless & skinless

  • Salt and Pepper

Instructions:

  1. Whisk together all the ingredients for the sauce in a small sauce pan and simmer for 15 minutes for flavors to combine (this can be done ahead of time, store in fridge for up to a week).

  2. Lay out chicken breasts. Sprinkle with salt and pepper. Place in crockpot/slow cooker.

  3. Top chicken with BBQ sauce, toss to coat, and cook on low for 6-8 hours.

  4. Shred chicken and serve over salad, on rolls, with veggies or slaw, or on top of a pizza.
