Friday Foodspiration: Chicken Cauli-Rice Marsala

Ready for warm and cozy comfort food?

Think you can’t have it because of some crazy New Year New You resolution?

Think again!

Comfort food can absolutely be filling, nourishing, AND healthy. This one pot Chicken Cauli-rice Marsala can do it all AND can get to the table quickly for a weeknight meal.

What it doesn’t have . . . . gluten, grains, dairy, soy, or sugar.

What it does have . . . lean protein and veggies.

Ingredients:

  • 2 packages Frozen Cauliflower Rice (20-24 oz total)*

  • 2 tbs Olive Oil

  • 10 oz Mushrooms, sliced

  • 2 Green Onions, sliced

  • 2 tbs Arrowroot Powder

  • 1/2 cup Marsala Cooking Wine (can substitute other wine or additional broth)

  • 1/4 cup Unsweetened Almond Milk

  • 1 cup Chicken Bone Broth (or regular broth)

  • 2 tbs Parsley, Chopped

  • 1 tsp Sea Salt

  • 1/4 tsp Black Pepper

  • 2 cups Rotisserie Chicken

  • 1/4 cup Nutritional Yeast

  • Optional – if you tolerate dairy, you can top with Parmesan cheese before baking or gluten free bread crumbs

Instructions:

  1. Add frozen cauliflower rice to a large skillet over medium heat until thawed and any liquid is evaporated. Remove from pan and set aside.

  2. Add olive oil, mushrooms, and onion to the pan and cook until mushrooms are soft.

  3. Add the arrowroot powder and toss to coat mushrooms for about a minute.

  4. Whisk in wine, almond milk, and chicken broth. Bring to a low simmer until thickened, about 5 minutes. Stir in remaining ingredients including cauliflower rice.

  5. Spray a small baking dish (about 8 x 8 inch) with cooking spray.** Add mixture from pan to baking dish top with Parmesan cheese or gluten free bread crumbs for crunch.

  6. Bake at 350 degrees for 15-20 minutes until heated through and top begins to brown.

*When buying frozen cauliflower rice, make sure that cauliflower (and maybe sea salt) are the ONLY ingredients!

**Alternately, make the whole meal in an oven proof skillet and place the pan directly from the stove into the oven to make this a one dish meal.
