Friday Foodspiration: Dark Chocolate Bark

I call this “empty the pantry” dark chocolate bark. It’s a great way to use the last few nuts, seeds, or pieces of dried fruit that are left in the pantry.

Antioxidants, healthy fats, and no added sugars make this a “healthy treat”.  Also, depending on what you choose for your “add ins” this can fit into just about any diet lifestyle . . . low carb, gluten free, dairy free, paleo.



8 ounces Dark Chocolate (80% or higher)

2 tbs Coconut Oil

1 tbs Swerve Sweetener

1/2 tsp Sea Salt

1-2 cups Chopped Nuts (the more the better!)

Additional dried fruit or seeds as a topping.*



1. Heat the chocolate and coconut oil in a medium saucepan over low heat.  Stir frequently to prevent burning until the chocolate is melted.

2. Stir in sweetener and salt until dissolved.

3. Remove from heat and stir in chopped nuts.

4. Spread mixture on a parchment lined baking sheet and top with choice of dried fruit or seeds.

5. Allow to cool in the refrigerator and then break into pieces.


*I used chopped almonds and walnuts in my bark.  I topped half with goji berry for my daughter who likes sweet and tart.  The other half I topped with salted sunflower seeds for my son who prefers sweet and salty.  Due to the high cocoa content of the dark chocolate (I used 90%) these are not overly sweet and you can adjust the amount of sweetener to your liking.
