Friday Foodspiration: Avocado Shrimp Salad

Ready for your Cinco de Mayo party? As a Maryland girl, I put an Old Bay Twist on all the Mexican flavors in this Avocado Shrimp Salad but you could use any spice on your shrimp that you like.

It is perfect for a party appetizer with tortilla chips or as meal in some lettuce boats AND is so so simple to make. Best of all it is loaded with protein and healthy fats to balance out any margaritas you may be having.

Ingredients:

  • 1 lb Raw Shrimp, shelled and deveined

  • 1 tbs Avocado Oil

  • 1 lime, cut in half

  • 1 tbs Old Bay Seasoning

  • 1/4 cup Cilantro, chopped

  • 2 tsp Sea Salt

  • 1 large ripe Avocado, diced

  • 1/3 cup Green Onion, chopped

  • 1/4 cup Avocado Oil Mayo

Instructions:

  1. Heat oil in a medium saucepan and sauté shrimp until translucent. Toss with juice from half the lime and old bay seasoning.

  2. Add remaining ingredients to a bowl and combine well.

  3. Stir in Shrimp, chill in the refrigerator for at least 30 minutes, and top with additional cilantro or green onions before serving.
