Friday Foodspiration: Bruschetta Chicken


This is a favorite appetizer turned entrée – Bruschetta Chicken. But this tomato based topping could be used on lots of things. Think toasty bread, ground meat, zoodles, or for pita chip dipping.

  • 4 boneless skinless Chicken Breasts, baked or grilled

  • 1 pint Cherry Tomatoes

  • 2 cloves Garlic

  • 2 Green Onions, about 2 inches a piece

  • 1 handful Fresh Basil

  • 1/4 tsp Sea Salt

  • 1 tsp Oregano, dried

  • 1 tbs Balsamic Vinegar


  1. Prepare chicken breasts as desired (we sprinkle with salt and pepper and cook them on the grill).

  2. Combine 1/2 the cherry tomatoes, garlic, onions, basil, salt, and oregano in a food processors. Pulse until everything is chopped finely.

  3. Add remaining tomatoes and pulse a few times to break these up (this allows for some larger tomato chunks instead of a puree).

  4. Top cooked chicken breasts with tomato topping. Drizzle with balsamic vinegar before serving.
