Friday Foodspiration: Bruschetta Chicken

This is a favorite appetizer turned entr̩e РBruschetta Chicken. But this tomato based topping could be used on lots of things. Think toasty bread, ground meat, zoodles, or for pita chip dipping.

Gluten Free. Grain Free. Dairy Free. Sugar Free.

Ingredients:

  • 4 boneless skinless Chicken Breasts, baked or grilled

  • 1 pint Cherry Tomatoes

  • 2 cloves Garlic

  • 2 Green Onions, about 2 inches a piece

  • 1 handful Fresh Basil

  • 1/4 tsp Sea Salt

  • 1 tsp Oregano, dried

  • 1 tbs Balsamic Vinegar

Instructions:

  1. Prepare chicken breasts as desired (we sprinkle with salt and pepper and cook them on the grill).

  2. Combine 1/2 the cherry tomatoes, garlic, onions, basil, salt, and oregano in a food processors. Pulse until everything is chopped finely.

  3. Add remaining tomatoes and pulse a few times to break these up (this allows for some larger tomato chunks instead of a puree).

  4. Top cooked chicken breasts with tomato topping. Drizzle with balsamic vinegar before serving.
