Friday Foodspiration: Baked Lemon Shrimp

Every week my son grabs the grocery store ads, finds a marker, and circles all the things that he wants to eat that week. Lots of fruits and veggies, but also chips and cookies that he knows I’m not likely to buy.

Last week he circled all the shrimp. He’s only tried it a few times, but I knew if it was his idea he was much more likely to eat it . . . And he did.

This simple recipe takes just 10 minutes to prep and 5 minutes to cook. It was on the table with some pesto zoodles in no time. I’m so glad he got us out of our chicken rut!

Friday Foodspiration: Coconut Cashew Trail Granola

I love trail mix! Fortunately, over the years I have upgraded from M&Ms and peanuts to versions packed with protein, healthy fats, and natural sweeteners.

Unfortunately, that’s hard to find in the store. Plus, the big problem I have with a bag of trail mix is all the little pieces.

That’s why my go-to snack these days is a granola instead. Big chunks still intact are required (you won’t find me stirring my granola every 10 minutes to break up all that goodness).

So, I decided to combine the best of both worlds . . . . all my trail mix favorites stuck together like a chunky granola. You can easily substitute your favorite dried fruits, seeds, and nuts, but I have to see this combination is AMAZING!

What better words to describe a fall family dinner than . . . warm, hearty, cast iron, and BACON!

This is where comfort food and healthy food merge. It’s a heavier dish with bacon and chicken thighs, so you don’t need a bunch of extra sides to make a meal. A light side salad is plenty!

It’s perfect for those looking for lower carb or higher fat options. You could sub turkey bacon and chicken breasts if your body doesn’t run optimally on fats, but you will sacrifice some flavor. Personally, I have a high sensitivity to fats so I just choose to have a smaller portion and keep all the flavor with a larger salad.

Friday Foodspiration: Almond Chicken Noodle Bowl

What do you do with leftover chicken on a busy weekend? I toss it with a yummy sauce, some veggies, and noddles for a one pot meal. I think in the future I am going to make this sauce and keep some in my fridge because my kids loved it! They asked for seconds and thirds on their chicken and vegetables, which usually requires great negotiation to eat even what’s on their plate.

Risotto is a winter comfort food usually loaded with cheese, carbs, and calories.  This creamy dish has the flavor and the feel of your favorite savory dish without the heavy bloated feeling afterward.  

Plus – by replacing the rice with cauliflower you are adding a serving of veggies with fiber and omega 3 fatty acids.
